If the enemy can be forced into blocking, pressure them until they deflect you. Their options out of deflecting are limited compared to neutral (giving them space and freedom to act). You also deal posture damage when they block you. Another universal tip is that for poking enemies walking > R1 is better than dash > R1 because there is a delay after the dash. Assuming there is no great distance to cover running, your walking speed is fast enough. Walk into his face and start slashing.
In phase 2 stand still and just jump when the fire bird comes for you(usually after the perilous sound) and then land mikiri on him. If you jump forward, that will most likely f up the mikiri. When he disappears and is about to come out of the owl(sounds weird) either you run away or use umbrella to tank his falling down attack. If you manage to parry it, prepare for either a sweep or overhead strike(sweep has the perilous sign.
Personally never struggled with Father as I thought he was much more straight forward than for example Great Shinobi & many other bosses so I can't really relate to your pain.
I assume you mean the moving sweeps? Cause those are the only ones I can think of that take some learning to pull off. The trick is to jump with him. If you just stand there and try to double jump, it won't happen because he's moving. But if you jump and follow him in the direction he's going, then you can double jump him easily. Just gotta practice it!
