Watch a guide online. Yes, listen to their strategy. But you can be the world's best tactician and lose if you don't know the boss' moves.
Study how they handle themselves in the fight. Pay careful attention to the telegraphs you see in the video and how they respond to them. Also note positioning and spacing. All bosses have move-sets and their bias towards certain ones changes based on how far away you are. Some moves are much easier to handle than others.
The unfortunate truth is that the game requires you to hone your reflexes and focus. While I can't speak on behalf of everyone, I was getting stomped for +10 hours and thought that I would never get better. I just beat the final boss and I think this is the best game I have ever played.
trying to parry ogre is a stupid tactic unless you're trying to be parry god, he is one of the health kill boss

TL:DR
Grabs have 4 different types:
Sweep grabs (Jump to avoid)
Dodgeable grabs (Dodge to avoid)
Parry/Weapon grabs (Can be parried like a normal attack, or dodged)
Mikiri grabs (Technically its just a thrust attack but it grabs the player if not Mikiri'd)
All of chained Ogre's grabs are "Dodgeable" grabs, meaning that they can't hit you if you're in the middle of a dodge, (preferably the forward dodge, as it keeps you invincible the longest).
This means you can stay in his face and keep attacking as long as you're prepared to dodge the grab, rather than sprinting around for small openings.
