You start with 1 gourd, so you only need 8 seeds to get to 9 gourds.
Finally, you can finish the game without upgrading your vitality and attacking power, i.e. 10 and 1 respectively. Provided you can perfect parry at least 90%. But if you are like me, an average player, just carry on what you are doing, you will max out your gourd, vitality. And you should on average reaching a value for your Attacking Power (AP) around 20 something. In fact, you can beat the final boss around AP 14.
Having a high value AP does not mean that you will be god like. You won't one hit kill Owl (the best I could do with AP99 was 4 hits). Remember this, as your AP goes higher, so does ALL the enemies' health, posture bar. In fact, after AP 27, it may take more hits to defeat the same boss.
Hope these help. Good luck and have fun :)
