Shura as a first ending max possible stats
Hey,

I actually made the biggest mistake of my life and I have chose the Shura ending as my first one.

To have the smoothest NG+ experience I wanted to know what are the max stats I can achieve in ths run before the final boss knowing that I am actually 16 Vitality and 8 Attack power.

You start with 1 gourd, so you only need 8 seeds to get to 9 gourds.

Hi, if you have a success rate of executing perfect parry around 70% to 80%, you can just carry on and move onto NG+ to get the other endings. There are 4 endings. You got the Shura ending already. So there are 3 to go. The normal way is to play the game another 3 times, i.e. a total of 4 playthrough (you have one playthrough already though a bit short). In any case, to get 100%, you will need at least 3 playthrough due to the limit number of lazurite crystals, 6 in each playthrough and you need 10 to fully upgrade your prosthetic tools. The game is so good and fun, I have done numerous playthrough already, over 3,300 hrs in the game. But if you don't want to do another playthrough once you are on target to 100% achievement, you can always do a manual saving of the saved game files at the final moment after you have defeated the final boss. Provided you have collected ALL the required items for ALL 3 endings. To save me writing another long post, I recommend you to watch FightinCowboy's Sekiro 100% walkthrough videos series on his Youtube channel. There are I think 30 episodes and he taught how to manually backup the saved game files at episode 29 (PC version).
Finally, you can finish the game without upgrading your vitality and attacking power, i.e. 10 and 1 respectively. Provided you can perfect parry at least 90%. But if you are like me, an average player, just carry on what you are doing, you will max out your gourd, vitality. And you should on average reaching a value for your Attacking Power (AP) around 20 something. In fact, you can beat the final boss around AP 14.
Having a high value AP does not mean that you will be god like. You won't one hit kill Owl (the best I could do with AP99 was 4 hits). Remember this, as your AP goes higher, so does ALL the enemies' health, posture bar. In fact, after AP 27, it may take more hits to defeat the same boss.
Hope these help. Good luck and have fun :)
