As for the Drunkards, you can run around them waiting for drink or strong attack and give them couple hits on the back.
Also, fire vent is pretty strong against them.
Also, Hirata is not the easiest part of the game, I'd say play main location until the castle at least if you struggle there.
My personal strategy in my own challenge run was to space him out. I snuck around the left side, stealth-killed the shield guy, ran across the field to kill the bowman, before he realized what was up and then spent a few minutes trying to kill the other guys first before I went toe to toe with Jozu.
Jozu hits hard, and has long combo strings that make it unsure about when they end. He does however have attacks that are more easy to distinguish, such as his grab attack, his overhead/double overhead swing and free punishment opportunities, such as his drinking and his poison buff or breath, as long as you remember to get out of the way. You can easily keep an appropiate distance away from him so that when he does an attack, you can move out of the way and then back in to chip away at his health. As long as you keep it cool and only move in when you need to, you can do it. Keep a clear head and remember to bring your friend into the mix as well to wail on Juzo together. I'm sure you can do it.
This is a well known fact.
I likely died around 100 times on my first playtrough.
First of all make sure you have axe and flame vent.
Then Kill the first mandatory horse boss and upgraded your damage.
You can check where you can upgrade your health and estus flask count.
Make sure to do the rat side quest.
And unlock some of the ashina tree passives as they very strong.
Now that said.
You will fight the Drunkard boss 4 times with slightly different variations.(all 4 fights are optional).
First stealth kill all minions if needed break aggro or divide and conquer 1 by 1.
Sekiro is faster than every other enemy and some enemies like archers and shield users are slow while others are faster and can be killed eg.lure them into the house.
Archer can be quickly R1 spammed then flee.
If enemy is in a house go to a corner spot throw a ceramic shard at him and corner stealth kill him.
Can clear most of a house no matter what NG+ cycle what enemy type.
Shield users get axed then killed.
Once every minion is dead or almost all.
Stealth deathblow the boss so 1 health is gone.
Flee to the NPC he auto aggros if enemy goes like 5 meter to him.
So it is 2vs1 againts his last health bar.
If any minion is alive especially shield one kill them fast so NPC can help more.
Throw and oil+flame vent then hit him while he is burning and can not attack back.
Once burn status ends oil+flame vent again.
This along with npc is enough to kill him.
But good idea to learn his moveset.
I probably died at least 100 times to Genichiro and the final boss alone. Plus I started playing Sekiro directly after Bloodborne
What prosthetic tools do you have? Flame vent? Axe? Feather? Firecrackers?
I did a parry only run in ER and it finally kind of clicked for me. I just started playing Sekiro a few days ago and it makes alot more sense to me now and I get the concepts alot better followed by asking the forums for some help on Lady Butterfly and it fixed my brain decay lol.
This game is blocking, jumping, dashing. But I feel like Jumping and blocking are the most useful. But some attacks its just safer to jump and avoid them.
Give it some time and come back its what I did and i'm better for it now. Games fighting is WAY more satisfying and it actually feels like a boss fight and not smashing heavy attack over and over again. I look forward to adding this in my 100% fromsoft games on my profile.
Good luck though!
