If you're this frustrated this early you are approaching the game wrong. Take a step back and chill, watch a video online explaining the mechanics even, then jump back in. I promise you the gameplay will click if you stick with it.

Chained ogre, for example, is to teach :
(1) To dodge GRAB attacks (by jumping or just dodge appropriately), and
(2) To focus on depleting health on easy-to-hit enemy.
Other bosses also will teach you other things like "don't run, deflect" or "try Mikiri Counter this dude" or "deplete their health first, then deplete their posture" etc.
This game is so unique that you need to FACE THE ENEMY and react to their attacks. Since successful deflect also rewards you with posture damage, the enemy big attack also means opportunity.
In my experience, I beat Genichiro on my third tries, but died 67 times on the purple ninja dude, about 9 times at drunk big dude, and about 7 times on this ogre because I'm bad at dodging.
I am currently playing this game and just beat the corrupted monk. Died 11 times, but very satisfying fight.

When you fight one in the open you have to constantly fight to position yourself to its sides. The damn thing turns around quickly so you have to dodge dodge dodge into its sides until it makes a move, take a swing or two while it recovers then resume moving into a side position. Once you get comfortable enough doing that you can punish its moves with charged attacks to stagger it.
You can also use oil urns + flame vent to stun it to give yourself even more leeway.

Also, try to beat without resurrecting. If things go pear shaped and you resurrect the first time, just nope out of there and rest at the shrine to reset. Don't keep fighting and dying. The shrine is close. The trash mobs are easy to kill to get back to him. Do this and there is no penalty other than resetting, but dying cost you gold/xp/dragonrot and frustration.
Really, do this with all mini-bosses. They are skill gate keepers. Most mini-bosses give you a way to escape. Bosses don't. If you can't beat mini-bosses without dying, the game is telling you to try something different until can. There is a skill you haven't developed yet, and you WILL need that skill later. So reset and learn.

I got my butt ROCKED by him my first playthrough too. He killed me more times on my first playthrough than the total times Sword Saint Isshin has actually ever killed me lol
also easier to do on a controller cuz u kinda dodge in a circle around him rather than just left or right (although w cam unlocked anyways, ur dodges should be in the clear)
You can try three tactics, and see if they fit the fight. For all of them you have to memorize enemies rhythm of strike, defense and movement. If you have:
1. Superior attack: Attack and deflect relentlessly > Break Posture > Kill.
2. Superior defense, inferior attack: Deflect > Attack on heavy attacks opportunities > Chip away enemies life > Until Break Posture > Kill.
3. Superior breath, inferior defense, inferior attack: Attack/Deflect > Jump/Run away to regain posture/position > Chip away enemies life/posture > Until Break Posture > Kill.
