How many Merchants?
How many merchants. Or better do the merchants ever get more supplies? I've exhausted the first two. Will that ever change?

Yes they will get new item as you progressing.
also there is item which will decrease prizes their wares near end of game.

Err, how shall I say it? Merchants or Vendors in Sekiro do not function as vendors in other RPG games. For one thing, Sekiro is not really a RPG game. Secondly, once the stocks are depleted, they don't get restock. Well, only a few upgrade materials, like scrap metal, black powder. From experience, do not rely on Vendors. Use them as a sign that there is new stuff here as you have just entered a new area. To save travelling back and forth, save your sen for crucial stuff, like spirit emblems (more explanation later), and upgrades. Oh, and save them for meeting New Vendor.
One best way to farm XP and sen (money) is Harata Estate especially during early stage. This is because the XP you get from killing enemies is nearly double that from killing enemies in Ashina Outskirt and Ashina Castle.
Now since enemies will resapawn everytime you rest at the idols, there will be time that you don't really want to go through the fights again, at the idols, do not rest. Just buy the spirit emblems for the shurikens and other prosthetic tools.
Lastly, don't rush in and start hacking away. Skeiro is a highly trained shinobe, an assassin. He is not Conan the Barbarian. So, stealth kill as much as possible. There is always a route for taking out most enemies by stealth if not all of them in each area. Also, most importantly, this will save the healing stuff, gourds and pellets for the fight against more powerful mini-boss or main boss. Hope this help. Good luck and have fun.

Imo it is not worth farming in early game.

In NG buying all the stuff is very expensive especially early game.

Once you are in end game or NG+ you can easily farm sen MUCH faster.

In NG+all merchants also get expanded inventories including infinite stock of divine confety.

You can get the golden vortex skill and get demon bell"debuff" too for increased drop rates.

As divine abduction and its other skills like Golden vortex insta"kills"the senpu monks(and Taro troops) in a aoe you can farm them very very fast.

And most of those monks can be stealth abducted so demon bell increased difficulty has no down side.

As a bonus you will get tons of sugars too from the monks.

VERY good idea to complete the long questline of the pebbler as he rewards with a 10% discount item for all merchants VERY useful for NG+ and onward.

Stealth killing an endgame enemy that drops 100 sen takes the same efforts as an early game enemy that drops 10.
And early game you lack most of the means to increase your farming potentional.
