I want to say demon of hatred.... but I've struggled more on isshin ashina(mostly isshin in the shura gauntlet)

Toss up between Sword Saint Isshin and Owl in the Hirata Estate memory for me personally. I think I just find their moves hard to read, especially Owl's firecracker smokescreen plays. I'm only on NG+ though.

Likely somewhat depends on the user.

Demon of hatred as it requires more darksouls tactic might be the hardest for some as just deflecting is not enough as you still take chip fire dmg.
Much easier if you use malcontent and fire umbrella well.

The Gank apes is the only 2 vs1 boss fight in the game difficulty likely depends how fast you can kill the second ape.My least favourite boss fight.

Aside from this two likely the memory father and Isshin is the hardest and they are standard Sekiro combat.

Their inner versions are likely even harder I not fought them yet.

Imo father is the hardest fight the father has firecrackers and also regens posture very fast.
Isshin can be more easily posture broken.

Guys for the double ape fight - it's the easiest fight in the game!
Prioritize baiting the blood scream from headless - You can do this buy running up to it and behind it - Put some distance between headless and yourself when this happens (in case that isn't obvious) the other ape will consistently charge at you when this happens. Then you firecracker him twice and hit him until he runs off.

Neither ape will ever land a single hit on you.

You can make it even easier by utilizing Mortal Draw after double firecracker.

Easiest fight in the game next to the geckos.

As for topic - Inner Isshin was the most challenging for me. Charmless, demon bell in the gauntlet where you fight literally every single boss in the game. I was sweating when I finally defeated him.

Demon of hatred is easy if you lure him to the cliff hes dead, sword saint ishin is the hardest boss
