Unrefined Sake

I screwed up and gave Isshin unrefined sake twice
Anyone has any idea how to fix this do i have to restart?

Don't worry about it. The sake business is only there to provide you some details of what had happened in the past so you can have a better picture of either Emma, Sculptor, Isshin and what's going on before. It has no consequence on any if the endings.
You can give one of each type of sake to either Emma, Sculptor and Isshin. Each will give a different content of conversations.

I know
I have finished this game 100%
I know its ins and outs
And its okay i had only 9 hours on that save and hadnt killed the ape or the fake priestess so i just deleted the save

I am new to the game and about to give my first sake bottle to the sculptor, is it possible I miss some dialogue If i give too many at one character or the wrong one ? (wondering since you restarted)

Giving sake to anyone is optional and in fact reveals very few details, and does not influence game progress in any way. Just a few extra lines of dialogues revealing some details about characters. Also on your 1st playthrough you’re not able to give all types of sake to all characters.

no the sake Emma gives you is only for the sculptor

Not really. You can give it to Isshin :)
