For a more serious answer, the Katana is your primary weapon, there are no others. But you have access to secondary ones, like the Spear, Axe, Mortal Blade, and others. But they only act as support - the katana is always your main weapon.

In Sekiro, it is not about the weapon type used. To answer your question, NO, there is no weapon variation.
In Sekiro, the main weapon is his Katana. Then with his prosthetic arm, "tools" can be added to it by visiting the Sculptor at his temple.
The prosthetic tool is a secondary weapon but its purpose is more as "assist".
In a nut shell, the fighting mechanism is "katana assisted by prosthetic tools, and combat arts".
The use of both prosthetic tools and combat art require the presence of spirit emblem. Think of the prosthetic tools and combat art like a gun, and the spirit emblems are the bullets.
