Some enemys get very low posture damage or get only posture damage when delt a certain kind of damage.

Depends on how much you deflect vs attack them, and whether you let their posture recover. Also, just jumping on enemies doesn't do much if anything, that is only really for sweep attacks, its not clear if you know that or not. Lastly, health vs posture varies from enemy to enemy. Some enemies will be harder to posture break than others.

Generally, you need to wear their HP down for posture damage to stick.

Some just have too much posture and unblockable/parryable attacks to death blow especially on NG+

Jumping only builds posture after sweep attacks. Deflecting is your main source of posture damage.

The average boss can generally be posture broken at half health (or sooner) but certain bosses like a very late-game optional boss will probably be killed largely by vitality damage. Another boss can only be dropped by posture damage.

Big brutish enemies like the Ogre will have strong posture so the way to get them is through health damage. The game keeps things fresh like that by making you have to figure out which strategies will work better for which bosses.

Orge is a bad example because he never guards your attacks. The enemies that do are usually better dealt with by filling up their posture bar because there's not much you can do to their vitality a lot of the time, but their posture bar still fills up when they have to guard your attack.

Another way to inflict posture damage is the combat art Ichimonji that simultaneously deals posture damage and recovers your posture.

Firecrackers also deal posture damage.

Jumping does actually deal a tiny bit of posture and vitality damage, it gets a significant bonus on the posture damage when you do it after a sweep

You aren't going to have Ichimonji (unless NG+) or firecrackers when fighting the Chained Ogre.

You can buy the firecrackers before chained ogre from the mob merchant near the old lady.

You'll get more posture damage on him if you douse him in oil then light him up. If I remember right. Even if I'm wrong, it makes the fight a lot easier.

the darker orange the posture bar becomes, the slower they are regenerating posture, which is dictated by specific health breakpoints. I think under 25% HP, no posture is regained at all outside of special moves that specifically restore posture

dodge counter slows down posture dropping, i never hear anyone mention this lol

u gotta do both, attack and deflect, if you are not agressive enough the gauge goes down really quick, depending on enemies. I can kill most without doing any damage.
