You can find tuitorial videos on Youtube teaching you how to deal with each attack dealt by Daemon of Hatred, I recommend FightinCowboy's, I Eat Gamers, Tyrannicon. For this reason, I won't comment on how to deal with Daemon of Hatred's moves. Just remember, there are 3 phases. Use the Malcontent in the last phase.
The general rule is keep close but keep on circling it anticlockwise. Just watch out for its stamp attacks (by the way, you can parry its foot stamping attacks), and its fire jump slamp attacks. When it jumps up and in flame, just run away but keep an eye on it. When it lands, jump up. This will escape the explosion (area attacks by means of fire explosion). Grapple as soon as you see the green mark above its head. This will pull you in and gives you time to put in a couple of hits.
Using a confetti and an Ako sugar will increase damage you deal by 12.5%. If you are confident, you can use the other red sugar (Yashariku), it increases the damage you deal by 25% but reducing your health and posture by 50%! By the way, if you don't have the latent skill "Devotion", effect of sugars only last 30 seconds. But if you have Devotion, effects of sugar last for 45 seconds. Oh, one more thing, just to remind you that you can only use ONE sugar at a time. If you use a 2nd sugar of different type to the 1st one, the 2nd one will replace the 1st one.
Lastly, as Lady ludex has pointed out, "cheese" him and make him jump off the cliff. Again, you can find a tuitorial video on Youtube. This has not been patched. I have tested it yesterday. Good luck and have fun.
Oh, almost forgot. Yes, it is an optional boss. Fighting him or not has no effect on the story ending that you are going for. But if you are going for the achievement, or/and intending to attempt the Gauntlets of Strength, you will have to defeat Daemon of Hatred.
As for his fire attacks, you'll want Suzaku's umbrella. If he turns red and jumps in the air, use the Umbrella, and then hit him with the charged Umbrella counterattack the moment the flames die down.
In phase 2, if he rains fireballls, block and counter with the umbrella. If he sumo stomps, run sideways and jump at the right moment, then use the grappling hook midair to get in close. Finally, for his phase 3 flame whip, jump over the first and third attacks only. Then get ready to jump twice, because he'll probably do two dashes in a row.
or use fire umbrella, malchotent wistle and divine conffetti and try to beat him.
true, he is only non-sekiro souls-like boss and can be kinda hard to get used to at first.
The fellow shinobis already gave all the good tips, in summary :
* malcontent for phase 3. When staggered, keep hitting even if he seems to start recovering
* (optional) suzaku's umbrella vs fire projectiles you are not confortable to avoid.
Don't override your divine confetti buff with suzaku's fire imbue
* divine confetti + ako sugar
* red purple gourd

With all this knowledge, DoH shouldn't be more difficult than any other boss.
If you struggle with specific aspects, please share them.
Just keep in mind that you can deflect more than you think. At worst, on bad deflects you'll just take some damage. Fiddle around with that :).
For phase 3, malcontent will shorten it significantly.
If you are able to kill the ako headless, that helps a lot. Also stock up on divine confetti.
