I met that Lady Butterfly, and she destroys me in a couple of hits :( I did get the guy on the horse eventually by running around like a headless chicken :p Sometimes grappling him can get you a few extra hits in and try blocking as much as possible.
And now there is this bull just trampling me to death rofl. But it's still fun :)
You must be aggressive, getting in hits between parries, putting the enemy on the backfoot, giving you the edge by controlling the flow of the battle.
Parrying involves pressing the right mouse button a little before the enemy makes contact with you, so its a timing game for sure. You wont be 100% successful at parrying in the beginning and the game does not expect you to. In the beginning go to the trainer at the dilapidated shrine and free practice with him for an hour or so. Nothing is better than practice to git gud.
At the end of the day, this is a souls game and excessive dying is guaranteed, infact that's what you're paying for!
Remember, you can die a million times, but you only have to win once to make it through!
Also, that is the FIRST boss on a horse which is considered the easiest.
Long answer, the game is designed around a four trick system.

Dodge
Jumping counter
Once you figure out the sequence that every enemy (Even grunts.) do to utilize this system, the retaliation becomes easy. In terms of horse man? Just parry him, push the corresponding button it says to when you parry him and get the hits off, parry, do it again etc. The fight after is the same, parry it, but you risk being burned if you fail the parry. If parrying or timing is difficult for you, then fret not. The devs put a safety measure in for people who cannot get timing proper. Spam the block button and the parry will be automatic. (This does not work with demonbell/charm on second playthrough.)
Really satisfying once you fall in lave with the combat.
You can have so much fun making cool fights with so much rhythm. Almost like anime battles but that will take a while ;D one step at the time.
that boss is actually pretty easy if you have the skill that lets you grapel enemies and attack. if you do you just stay away from him until you do so, get a hit in after then run away and rinse and repeat. the boss after him, hah, good look. He's a straight up wall for me every time i start a new game, no idea why but he is.
