At the Steam client screen, right click on Sekiro (on the left menu), select Properties. Then select General. Now, unselect steam cloud. Now open Sekiro and play a little bit. Go to the nearest idol and rest. Now exit the game completely. Now turn the Steam cloud back on. Now, the saved game files of your desktop will be the newest. So, when you start Sekiro after this point, the newest files should be saved to the Steam Cloud. Other can confirm if I am correct or not.
For your reference, the location of your Sekiro saved game files is:
C:\Users\YourUsername\AppData\Roaming\Sekiro
When you go there, you will see a folder with long digit number as folder name (17 digits).
There are 3 files in this folder. If you want to backup your saved game files, the first two starting with S001 are the one. Ignore the one with Steam on it.
Just save it to a folder on your desktop or anywhere of your preference. With these two files backup, theoretically, you will never "die" and hence never lose any XP or gold. :) Just copy the two backup files back to C:\Users\YourUsername\AppData\Roaming\Sekiro\xxxxxxxxxxxxxxxxx.
