EDIT: I've never tried it myself, but I feel like this is a fight where using keyboard and mouse, while not locking on, might be beneficial.
Cool, will try again. Just gotta stay away from the walls. The ONLY issues I've had with this game are the occasional "death by camera" or "death by wonky auto-target".
Yes, those are very common with third-person hack-and-slash games, unfortunately.
Not a solution to this camera problem, but Sekiro FPS Unlocker & More has a couple nice options. Main thing I use it for is turning off the camera-centring that occurs when you try to lock onto an enemy and they're not sufficiently on the screen for the game to care.
With this guy, just stay close to him and deflect everything, apart from the perilous attacks. If in doubt, throw a firecracker. Hope this help. Have fun and good luck.
