For what it's worth, you can always do a manual back-up. The save file is located at AppData/Roaming/Sekiro, according to google
When you quit the game, the saved game files will be backup to the cloud, that is if you have not changed the default settings. I know. The game is hard enough. And now, you lost a lot of stuff due to mistake. In the game, I personally think the the confetti are most "valuable" items. In early game, only around 10 or 15 are available. Only until after killing the true corrupted monk at entrance area to Fountainhead region, then confetti will be available at all vendors for purchase. The 2nd item will be the Ako's sugar though it can be farmed by killing monks at the Senpou region, they don't drop it everytime. And one can go through a lot of them quickly. I did went through over 30 when I was going for Shura ending, i.e. killing Emma and Ishiin. I died so many times. I was playing NG+. They were stronger than when playthrough the first time.
As yds had said, you can backup the saved game files manually. Let say you are going to face the general on horse, quit the game (don't have to exit out of Sekiro completely). Then Alt + Tab to go to Desktop. Locate the saved game files on your PC as yds had pointed out. You should see one folder of which the name will be a long number (I think 17 digits). Inside this folder are the current saved game files. Saved the two files starting with S001. Ignore the Steam bla bla file. Save them to a folder, say, on your desktop. Well, that's what I have done. Give it a name so you know at what stage the game or rather you are at. Doing this, you just reload the files back into Sekiro saved game folder.
The first time I fought Demon of Hatred (no cheesing), I reloaded the files over 50 times... hehe.
Apart from the confetti, all other stuff can be farmed, that is during the early stage. So, chin up and get your sword up, start deflecting. Good luck and have fun.
Also, I ALT+F4 out of it, how they go and save when you ALT+F4 they have to program that into it T_T ..why!!??
Don't alt+f4 out of games, this could ruin your savefile. If you want multiple saves for a single character, just back up your file.
You may be right that it would be convenient to have many saves, but there's a reason why Fromsoft games don't have this feature. SInce death doesn't mean "Game Over", this encourages players to feel responsible for any mistakes they make. Which helps them to avoid those mistakes later. It's not a bug, it's a feature.
If you want to back up your save, you can do it manually. If you feel like the game's not for you just because of this, well, it's your right. Good luck with other games!
Oh, one last thing, I forgot to mention that the game will automatically save when you buy or sell at any vendors. Also, it will automatically save when you kill or be killed by any enemies, boss or no boss. That is the moment that you shall see a blue flame appearing next to your XP bar at top right hand corner.
That is intended mechanic to sinnergize with the itended difficulty of the game. Think of it as how you can use healing items in the pause menu of some games. That is pretty broken and usually makes you immortal as long as you have those items in your bag. Not implementing healing in that ways improves the difficulty of the game. Same goes for saving system. It directly affects game difficulty and punishment.
Automatic backup saves separate from the auto-save has never been a thing in any game that I know of.

A good point. It's either a single autosave, or manual saves. Neither of which would have helped the OP
