Learn all the ninja tools, what they do, what is weak to them. Grind a bunch of skill points (Practicing against mobs you struggle with) and learn all the esoteric arts - or at least a couple that you really like and abuse the hell out of them.
Go to youtube and watch some videos of skilled players - I think the problem you might be having is not fully understanding the POWER that you have as Sekiro. He is an absolute UNIT and when you see what you're leaving on the table you might change your mind.
Honestly, if you're not having fun, there really isn't anything you can do about it right now. I had a similiar experience with Cuphead at first. The issue was, that i wanted to beat that game for the sake of it, not actually play it to have fun. I just took a break until i was like "I wanna play Cuphead now" and ended up having a lot more fun with it. Maybe that will do the trick? Either that or the game just isn't your cup of tea.
I beat Shichimen Warrior and a Headless without pacifying agent, I killed every miniboss without issue and only got "stuck" on the lightning phase of a certain boss because I kept mis-timing my jumps and died repeatedly -- DON'T OFFER ADVICE, I ALREADY BEAT THE BOSS, CHECK MY ACHIEVEMENTS -- but like I said none of this has been FUN. It's just been tedious.
Then... why are you still doing it?
But yeah it just feels UNFAIR, since i compared it to dark souls. Don't wanna go into to many details, but it just doesn't feel like a FAIR game, DS did.
Beating a challenge made me feel like finishing a chore, no sense of acomplishment.
