Attack power and deflections
Does the former affect the posture damage you inflict with the latter?

From what I've played so far it seems that breaking a boss' posture is a lot more feasible than getting their vitality all the way down. I'm getting the hang of timing deflections to that end, which is encouraging, but I'm also aware that everyone gets a posture buff with every subsequent playthrough. Is that gonna be a problem for a more defensive/counter-based player, or do upgrades to attack power help you keep up?

Don't be too worry about your attack power. In this game, you can still broke most of the enemies and bosses posture even if you are at base stats. You just need to not let them have a break too long so they won't recover their posture.
I think this is a good example for doing a defensive play.
