Umbrella helps countering some of the more annoying attacks like his long range lounge. In fact its the optimal strategy. Normal deflection of that lounge knocks you back, so you can't counter attack, but umbrella completely nullifies knockback and you can immediately follow with umbrella slash dealing precious vitality damage.
However the loaded spear is 100% the counter-prosthetic to guardian ape.
Sometimes the ape will perform a powerful downward slash-slam - its telegraphed by ape standing up right and camera even follows it up in a cinematic way.
If you deflect that attack - the ape will stumble and full upon its knees. During this time you can stab a spear into its neck-hole and then pull it (press prosthetic button again), pulling out the centipide hiding inside. It deals CRAP ton of posture damage to the ape and shortens the fight by a lot.
You'll still have to dodge the occasional perilous swipe but the closer you stay to him in phase 2 the easier I find him to be.
1st phase you can use oil+flame vent to apply a dot that will constantly drain the boss health, firecrackers work too since it's a beast, be aggressive and keep the pressure too, in order to raise the posture bar (Ichimonji double is really good if you time it correctly) -> wait till the boss goes nuts and land on his @ss and roll left/right, use Ichimonji Double to punish, while also deflecting, poison resistance items could be nice if you mess up the fart escape
2nd phase --> Pacify agent and/or the purple flask to counter/raise your terror resistance in case you f'.k up any scream's escape
My strategy for anyone who may also be stuck is this: For Phase 1, keep your distance during combos, stay close enough to avoid the ranged but punish three attacks. When he falls over and flails, get a hit or two in on the head - optional but if this isn't happening often then also throw your firecracker when it gets up again. When it does a rolling perilous, jump back and forward if you can but I sometimes would run back and diagonal, try to get a hit or two here as well. When it does a leap for a combo, get a hit or use firecracker. Main thing for me was hitting his side as he was stunned by the firecracker, 4 at minimum but if it's fully stunned by it then you get about 10 strikes in before it rolls back. I also used Nightjar Reversal when in the air by the grapple point as it roared.
Phase 2 is entirely as these wonderful people suggested. I used deflects on the main combo it would do, personally I learned to best deflect the first hit to trigger the main thing I punished: The overhead slam. It took a few tries but I figured out when to parry that final blow (Just before it lands, spam parry if you need but try to learn the timing for that). The perilous sweep you can supposedly jump on to also make the overhead slam combo but I never managed it and always just avoided it. If it dives to slash, jump at it for a little air slash but otherwise avoid it, you might be able to get a slash along the side if you're fast. The jumping stab (where it leaps into the air and does a perilous stabbing attack) I don't think can be countered, I just avoided it. The scream should be avoided but you can get a slash in too if you use umbrella or just wait it out. Overall, this phase should be trying to get that spear used on it, It will make the fight significantly faster than trying to chip away health, though if the posture is high enough then you TECHNICALLY can rush in to just swing a few times to get it done with but I personally just have a death wish so uh, I don't recommend it unless you're really confident.
