The worst attack is the one where he summons those fire columns and then attacks with the "One Mind" combat art. When you see him charging that attack, find a spot with no flames on the ground and turtle up under the umbrella while he unleashes the combat art. If you managed to remain close to him after he finishes the combo, you can also attack him with the umbrella.
All of the other attacks are more easy to deal with; the big flame pillar can be avoided by running sideways and jumping at the right moment (similar to the one done by the demon of hatred).
Beware of his dodging, he often dodges your first attack like a true badass. So do not spam too many attacks because when he dodges he follows up with a very quick slash and it can get you easily if you piped many attacks.
An just like his Sword Saint form, sometimes after a few close exchanges, he sidesteps you on your right side and he follows up with a perilous thrust. Do not interrupt him while he does that, let him thrust attack and mikiri counter it.
When people were complaining about Saint Isshin, I was crying over his Shura ending version... Anyways
For his normal attacks you have to learn the patterns and the timing, no other way around that.
When he does the Ichimonji, dash to HIS left, slightly behind him, his follow up slash will miss, you can punish him. (phase 2 version is the same)
For his Weird attacks (art slashes etc...) whether this version or the saint one, just use mist raven, go behind him and punish.
Now for the "big move" during phase 2 where he lights up the floor, the idea is to interupt him before he does it. For that I like to use The most op art in the game yet rarely (that I know of) talked about AKA High Monk.

I ran through NG+ by literally first-tryin' every boss BUT him.
Emma just broke my patience with her messedup hitboxes (the grab ffs...). And him with all that fuc*ng fire.
It took me like 5 attempts and a lot of items to kill him in that run (then I just reloaded the save because I had to get only other 3 achievments in the same run to complete the game at 100%).
Srsly, by far the worst.
Instead I liked his "true" final fight a lot more. Way more "clean"... it is pretty weird that the old Isshin is stronger than the reborn one but, ok.
it's like the old god in gantz-o, he has more experience and is way more skilled then the young demons.
Also, when he's about to do his ichimonji (big overhead hit) on his 2nd phase, don't bother deflecting, always dodge that one because he follows it up with a fire sweep.
stay close to him at all times, when he sheaths his sword and starts screaming, he's about to do the big fire AOE. Just use 1 fire cracker to stun him and cancel it
Be very careful when you start attacking him. He sometimes will dodge your 1st attack and immediately counter. So don't spam attack. Strike once, and if he dodges, be ready to deflect, if he doesn't, you're in the clear
