Bloodborne: Ludwig the Holy Blade, Lady Maria Theme, Cleric Beast Theme
Sekiro: None hit the highs that the previous themes, I've mentioned, hit. Sword Saint get my vote for most favorite within Sekiro.
Out of all these, Ludwig, the Holy Blade is my all time favorite. Therefore, Bloodborne has the best music (3 tracks + my all time favorite).

-Emma the Gentle Blade, first boss of the Shura ending
-Nameless Song, the end credits of DS1
-Daughter of Chaos, right at the entrance of Lost Izalith (the worst area in DS1) or Firelink Shrine
It's too hard to rank them 1 2 3, they're all great, just like From Software's games
