1st Isshin phase you can be a lot more aggressive than you were being there. After he counters with his swing from his bottom right you can immediately counter with your own attack, you don't need to wait for him to do two more swings after. And when he does his Ichimonji, you don't need to dodge out of the way. All you have to do is sidestep it and hit him in the back.
For Isshin's phase 2/3: don't try blocking the gun shots; just sprint to the side instead (if you're not too close to him). Don't just randomly stop attacking. Doing so gives him more freedom to choose from his moveset, making him less predictable. Keep attacking if he blocks one of your attacks until he deflects, then deflect the counter if it's with his sword and resume the attack. However, if he does not block, pay close attention to him. If he doesn't stagger, there's an attack coming and you need to stop attacking to defend against it. For the attack where he charges up then does a 360 degree sweeping slash, you don't have to time a deflection. You can simply jump over it. In phase 3, you were panic-backpedaling a bit. I know that's just inexperience, but still something to try to avoid.

His second level is basically same with his third level. You have to play more defensively but third you need to jump the moment he shoots lightning to absorb it and reflect it back to him to break his posture.
