Or you leave the Ape be for now and progress to Ashina Depths with the end goal of fighting the corrupted monk there. This will lead to you skipping that mentioned harder boss fight after the Ape.
Leaving the snake alive for your whole playthrough is completely fine, it is not a 'real' boss ( queue people that don't think so ). Because of that, there is no clear-cut order that people kill the snake in if they want to kill it - it's basically just a detour of 20 seconds on your normal progress route to kill the snake. And just like was said above, I am one of those people that only kill the snake if I'm going for a 'return ending' playthrough which, among other things, makes you collect the fresh and the dried viscera with the fresh one coming from the kill of the snake.
