Many souls players had even more problems i heard because their old habits of fighting like in DS got them killed.
I had sekiro too as first "souls" game. Its hard but fair. Dont bang your head. Ask what you do wrong, notice what attack you missed, notice what attack you answerd with the wrong move. Train with hanbei the undying.
Git gud is no question of hope but of practice.
Also use your wits. Try different approches.
About the drunk fat bi**ch. Clear his minions. Run away if it get too dangerous.
If he is alone lure him away and wait until he goes idle again. He will move back then you can backstabb one health bar.
Only after that engage the npc in the fight. Take a ako sugar and gank him from the back when he face the samurai.
If you cant finish him before the npc dies try more to evade his attacks and then hit him. Parry dont deal much posture damage to him.

I have a friend who’s playing through it as their first souls game and nearing the end.
I also played Dark Souls 1 and Bloodborne multiple times and still had to struggle and learn through this game, especially Hirata Estate on my first run. Now I have beaten it several times as well.
As for Juzou, the game does give you quite a bit you can work with in that scenario. The fight is just a lengthy process because you have to take out the other guys around him first.
i had trouble with him too but could defeat him by picking off his goons one by one and then luring him over to the guy that fights with you to finish him off together
If i can make a suggestion for Sekiro, think of it like rock, paper, scissors.
Your enemy strikes, you want to pary, the enemy blocks, you want to strike. the enemy sweeps, you want to jump + kick, the enemy thrusts, you want to counter. If you pay close attention, you can often see the enemy winding up for certain attacks that will tell you what attack is coming, then you just need to learn to respond quickly.
One important thing to know is you're generally better off dodging big overhead swipes than parrying them, as that usually leaves the attacker more open to getting hit. Also, you want to try and stealth kill as many enemies as possible, or lure some of them away so you can fight them 1 on 1.
If you sneak into the grass, you can get 1 early death blow on the shinobi hunter, then run around dealing with the adds until it's just the two of you, but I highly recommend making sure you learn the Mikuri counter skill before you take him on. If you're having some trouble, try getting the flame barrel from the bandits and seeing if you can take on the chained ogre miniboss in the ashina castle outskirts, he teaches you to dodge and jump a lot. I had trouble with both of them to start with. Don't feel bad, you can do it!
He is only harder if you dont kill his soldiers first.
Try getting from behind, by the left passage, kill the shield guy, run away, everyone will follow you, then when they até scattered try to repeat getting from behind through the passage and kill the "ranged ones" first then just kill the others, just dont ler them gank you and run away always when the fat idiot comes closet.

After I killed Lady Butterfly once and got her HP down to some 40% on her second life I tilted and could not kill her again so I kept doing other stuff through the game.
I may return trying her again later.
1. I managed to beat the drunk guy and the general on a horse
2. I didn't realize you could just hold the block button, I thought in order to block you had to time it perfectly with their strikes
3. Being patient and observing more really helped

Only block dont work on later enemies. Oniwa got big intervals between his strikes so your posture can recover.
If you keep blocking on full posture your guard breaks and you're open for attacks. If you deflect your posture dont break even if the bar is full.
