Report a translation problem
In all seriouness, the game seems to be designed with a very specific difficulty in mind. It's either hard/hard with the bell, new game+/new game with the bell. There's no "easy" option.
If you want hand holding this is not the game for you.
All jokes aside yes, the default that you are at already (easiest) and the demon bell difficulty (hardest). At Senpou Temple there is a bell that you can ring to gain the demon bell difficulty.
Don't forget giving Kuro his charm back on NG+ for an even harder time.
