I try to stay as close to him as possible and stay aggressive but its very hard to counter his moves, specifically the special where he grabs onto you and then shoots you point blank in the stomach, do you dodge, parry, or jump above that attack?

I pulled back when I encoutered that boss to do some side exploring, but I'm pretty sure the "umbrella" can help a lot in this situation I'm really liking it more and more, most enemies that annoyed me when I couldnt stealth them are now way easier with a "shield" I can hide behind for a second to think of a good strategy.

I really had to learn his move set. Obviously try to deflect as much as possible, make sure to block his bullets also don't try to dodge them because that's how you get clipped.

When he does his grab with the gun you can dodge straight back to avoid it and then dodge back in for a few free hits.

Also when he does his spin kick move he will immediately shoot his gun afterwards, so try dodging the kick and then rushing in for some hits.

Above all just keep the pressure on him. This fight took me a lot of tries to beat and guess what? There's more than one of them in the game.

deflect all his slow gun swings
if he kicks, be ready to sidestep a gunshot
his only perilous attack is the grab, just jump away
keep close to him, his posture regens very quickly.

His unique is a grab so dodge or jump to avoid that.

Otherwise as silly as it may seem all of his other attacks can be parried. Bullets still lose to sword.

Alrighty, i'll try to take into account all of this info when fighting him this time and see how much better i can do, but first i'll try and find the umbrella shield prosthetic first

Keeping pressure is the key that i've found. I've been using the spear upgrade that makes you charge forward with the follow up attack skill upgrade. that combination seemed to work for me that built up his stance gauge up while opening him up for a couple of hits to get his hp down to keep his gauge up.

Get him on the tent/hut structure... And hit his feet. That's how I cheesed it. He can still hit you but way less and he can't guard very well.

I can also recommend using fire against him, it helped him get him down to mid life before doing the suggested way.
