What skills can you deflect / parry
I'm having a seriously tough time deflecting attacks, especially from bosses. When bosses do those skills which have the red Japanese word come up, can you deflect those? If now how do you parry exactly? Is parry and deflect the same thing?

Even when I do deflect an attack it doesn't always proc the execution thing, what am I doing wrong? The bosses kill me so fast I don't even have time to learn their attacks properly :D

Did you not fight the tutorial guy? Jump the sweeps (double jump on the enemy) and parry piercing attacks or dodge / dodge into if you have the skil, both are marked with red symbol. Dodge grabs, don't remember if they're marked. Everything else you should be able to parry or sometimes dodge.

Deflect/parry doesn't give you the chance to kill the enemy, just damages their posture.

For some reason most of the time the red symbol attacks just blast right through my deflect / block / parry (LB) on xbox controller. Sometimes I roll out of the way of the attack but the enemies follow my role mid animation, kinda like aimbot xD

Well as they should. You can only deflect piercing attacks, not guard but deflect, with perfect timing. You can't dodge sweeps, unless you dodge back and they don't reach you.

From the hub area, go right past the bonfire and go through all the training with the dude there. Also, read all the text that pops up on screen, it's important.

Deflecting is the same as parrying.

The red words are either sweep, thrust, or grab. Thrusts can be parried, sweeps can be jumped, grabs need to be avoided.

Deflecting doesn't proc deathblows, you need to deplete their health or break their posture first (the big bar in the middle-center of the screen).
My big question is how do you tell if an enemy is going for a thrust or a sweep? The camera's glued to your character's back so it's hard to see their stance.

Both thrust and sweep take a bit of time to "charge" so you have few seconds to choose what to do about it. Its just trial and error until you start to see which one is coming.

Thanks for this, makes it a bit clearer. One thing I've found is another bit of a problem for me is I don't get much time to attack because the enemy will often attack when I'm mid animation, but I'm getting the hang of it a little.

I watched a twitch streamer though and when he went to the training dude, there was a list of topics to practice and I only have 4 topics, attack, dodge, deflect and mikiri, the streamer I saw was at the same stage in the game as me and had about 4 other options, like counter attack and stuff. W

Where do I find these extra training topics?
