Cheap, but getting two shot after a missed parry for the 50th time gets old... Include the stealth kill to get it over with faster
Dash backwards twice when you see the perilous kanji to avoid the grab.
Repeat.
Ignoring the cheese above, everything she does can be parried (even if the moveset is kinda weird), and you can back away from the grab. Don't recommend side stepping, the grab has pretty insane tracking.
One of the harder minibosses to me, at least.
You can block bullets and snakeyeyes loads the gun pretty long.
When you see kanji symbol, jump on her twice and get few slices with your sword, it will deal her pretty nice posture damage.
She is really slow and her attacks are well telegraphed - use that your advantage and remember, when there is perfect deflect, she will be stunned for couple of seconds. You might even be able to use LB+RB ability.
Stand close - worst thing you can do is stand away, because they snakeeyes will load up the gun and you might get massive damage.
And to kind of repeat myself - block. You can block pretty much everything, even kanji sometimes, but for me it was better to just jump on her.
With the demon bell in NG+, I had problems with both snake-eyes - took me probably 3-4 attempts to take each of them out. At that point the grab/shoot is pretty much a one-hit kill, so you have to be super careful about avoiding it. Even without the bell though, she can do a lot of damage if you let her hit you.
Be aggressive and deflect her melee counter-attacks while avoiding her dodge, and she can be beaten.
The Gunfort one would be difficult if you couldn't sneak back from behind to get a cheeky stealth attack on it, plus there's a little ramp / hill thing terrain thing going on that makes them extremely confused so you can just wreck them.
Really though, they have a very small pool of attacks, are incredibly easy to deflect and dodge around, and both can be stealth attacked to remove half of their HP. If there's challenge, I can't see it.
Are you there early? Is your damage not up to scratch? Try using thrusts to remove chunks of HP at a time rather than a few small scratches. Do you not have a lot of healing? Explore! 8 of the 9 gourd seeds can be found before fighting Genichiro!
I'm not sure that being able to avoid fighting an enemy entirely by luring them into poison counts as a lack of a challenge, since that's avoiding the fight entirely. If you're 100% avoiding a fight, it's no different to lure them into poison than it is to use a mod to kill them instantly, or not fighting them in the first place by just running past them or such (they all require equal skill).
Though the stealth kill is a legitimate tactic in this game for sure, and can be helpful against a lot of mini-bosses.
