how the ♥♥♥♥ are you supposed to block/dodge/counter her tracking 1 shot move, theres no trouble evading and countering everything else, sometimes i randomly dodge it by jumping around like a madman while she regains half her posture. what am i supposed to do?

The grab where she shoots you point blank afterwards? You can mikiri counter it..it does count as Thrust and grab alike, also she is weak to poison... takes away half her posture

You talking about the grab? Alot of people have issues with grabs. I never had trouble with them because i hold down the run button and run away.

What oneshot move? The grab? Stay topped up and it definitely isn't a oneshot unless you've been trying to avoid miniboss up to that point. As for evading it, you can just jump back as the perilous attack indicator appears or deflect it with proper timing.

Look at some speedrunners vids. That move can be deflected believe it or not, the timing is just very tight. I tend to just jump backward and it works every time.

Use the umbrella tool it is a guaranteed block and you don't have to worry about timing.

You just have to jump when she does her grab..

You can avoid pretty much all Shirafuji's moves by dodging past her while unlocked. The tracking seems to be designed to follow a player who is locked on and can't really follow you properly when unlocked.

I did the same but still get caught 90% of the time. That grab is just ♥♥♥♥♥♥♥♥.
