Okay but the dialogue is still the same. He just says farewell and admits he knows who it is which is the only thing that changed. She tells you the same thing without you knowing who it was.
So saying it's a secret dialogue is overstating things and making it more impactful than it is.
Edit: At least for me it was the same dialogue just that Sekiro didn't know it was the sculptor.

as you can see sekiro never says anything in my game
So? It's still not a secret. Some dialogues for NPC's also change depending on when you give them sake. Does that make them secret?
And because one guy claims this to be secret, doesn't mean it's actually a secret. If i had this dialogue and thought nothing of it, i bet plenty of people did.
but like i said no one has talked about this and the wikis dont either, it's the very meaning of secret dialouge if it can be missed, and requires certain triggers
I think it's actually related to if you bother to give everyone every type of sake and listen to those dialogues so you actually find out about the sculptor being called urangutan etc.
Which the game actually actively urges you to do (Remember Emma saying you should give the sculptor his favorite sake?) so it's even less of a secret if i am right IMO.
I would agree that it's not something everyone comes across but that doesn't make it particular hidden or a secret.
Well i did nothing special otherwise and that was during my first playthrough where i only had the ending where you end up sculpting yourself.
