Depends on the combo he is doing. He only does follow-up attacks to certain moves, and once you die on him enough you should learn how to read his moves fairly well.
Though I personally recommend using Suzaku's umbrella or w/e (the fire resistant one) for emergency blocking when you are about to be hit by fire but can't dodge away in time, and the demon-stunning whistle (use it 3-4 times during the fight to get in free hits). You can also use the fire resistant red gourd to help against the fire damage, plus dousing powder, plus ako's sugar to reduce vitality damage taken.
He is a tough boss for sure, but after playing through the game three times and learning how to counter him better, he definitely isn't as bad anymore. It just takes practice.
