It does.
The reason people want an easy mode in the first place; is because the game has brand new mechanics that make it different from the other Fromsoft games; but rather then giving players time to learn these new mechanics effectively; you're given one tooltip vaguely explaining; It's not till after the first chapter (where you probably get crushed by the majority of mechanics you don't understand working against you); that you get a sparring partner to learn how to do half the stuff the game expects you to know in order to stand a chance. And I'm fully aware you don't HAVE to fight anyone. You can sneak right past if you feel like taking that approach; but that comes with it's own downsides later on in the game as well.
The issue that comes up is people are expecting the ability to learn the game at their own pace (as most games do); but this game is like teaching a child to swim by just throwing them into the water. Not everyone is going to instantly appreciate being thrown off the deep end; and having to adjust to that. Most people agree that this counts as fake difficulty; as once you DO understand how it works; suddenly there's no threat whatsoever, and you can do it right every time. So where's the challenge? People don't want the game to be a mindless slog like every FPS game ever; we just want a bit of a chance to figure out the more effective way to break posture and stuff. (I don't even know if an easy mode would do that; since what could they even do? Slow down time? Mark enemies with colours to indicate if things work? I've got no clue).
Inevitable "Git gud" will follow; since that's always the Elitist argument; despite the fact that Sekiro actively punishes Dark Souls players who choose to play the game like Dark Souls. (Which admittedly; I do find clever and funny, since their own muscle memory will screw them up more then unfamiliarity).
I dont even understand what is so hard to talk to the immortal dude in your hub and get the combat down. Its right there. But no,..the whole game needs to be easier, because apperently people cannot overcome the challenge to train with this dude.
From Sodtware games have a big appeal BECAUSE they are harder, than your Call of Duty.
You call it fake difficulty. It isnt. It just becomes easier, because you improved your skills.
Imagine Witcher 3. (example)
You play trough the game and grind for hours to find the best weapons to have a decent chance to make it to the end.
Now 5 weeks later, a patch comes which places 3 overbopwered weapons into the game which are easy to access and nullifies the weapons you had to work for a long time.
It would feel bad. It would suck.
I dont want to have the option in the game to play it easier.

I grew up in '91, thank you very much. I've beaten games like Battletoads and Kaizo Mario World; these don't come down to improving skill; it's trial and error; the entire thing is learning how to proceed; and bracing yourself for the next ♥♥♥♥♥♥ decision developers placed in your path to screw you up.
If you actually bothered to READ what I put; you probably could've gotten a grasp that the entire point is the majority of gamers would prefer learning how to play before they get thrown into actual risky combat. I'm aware of the Immortal dude; I know he exists. You get to meet him after dealing with 6 normal enemies and a Mini-boss (all of which who will probably kick your ass at that point; since you have NO idea how the mechanics work; unless you can read a tool tip and instantly master what the game is saying).
Sounds like a personal problem
You would find out that "personal problem" when an easy patch hits and how many of those exist.
People in the Witcher Community already got angry because the "food skill" nullifies difficulty. You just cannot relate.
Then make it so you have to select the difficulty at the start of the game, and once chosen you can't readjust it during gameplay. Easy fix.
and then alot of people will claim that the game is boring and whats the hype about since its too easy and offers nothing interms of anything that isnt out anywhere else., thus creating controversy
If people play on Easy, that's their own choice. And if people call the game "boring" and then say they played on easy, disregard what they say. Easy should be a tutorial for players to learn the mechanics and should be used as a catapult to help newcomers improve before they play the higher difficulties to improve.
Or, make it like I Wanna be the Guy; and have the "Easy" mode MOCK the player; so anyone with a brain can tell the player is a big baby when Wolf has a huge pink baby ribbon on his head.
