Tyrannicon is the best for cheese guides. True Monk guide just came out and holy crap that is a nice cheese.
Second phase was a lot easier for me because of how telegraphed his swings were. Be ready to jump back when he does the AoE scream, make sure you never put yourself against a wall or you're gonna be in trouble.
I got him on my second try. First attempt I jumped down unprepared. Wasn't expecting the sunken valley to be so small of an area so I was still in exploration mode.
When he dives towards you and tries stabbing you. He usually does it when he's a bit far away. Instead of deflecting it just jump over it towards him and you can get some good hits on him while he's getting up.
His big overhead swing, if you deflect it he'll topple over. Another opening.
Oh, also his two perilous attacks, just jump over them towards him and give him some whacks.
His second phase is actually much easier. He doesn't have that many attacks and many are well telegraphed.
His key attacks:
1. If he moves his head towards his neck, he's gonna scream. Dodge back & hold the button to run, or Lilac Umbrella it. You should be running before the dangerous warning. I didn't actually try, but Lilac Umbrella with Projected Force should do some significant damage since it's divine damage and he is weak to that.
2. Both his other dangerous moves are sweeps, one follows a jump. Jump yourself (you can Mario stomp his head after his jump-sweep for nice posture damage).
3. He does a belly flop slash, jump into him (over his slash) & he's open to hit 3 times.
4. When he swings straight down, deflect to give you a huge opening for spear pull, or for normal damage.
5. Otherwise, just deflect his attacks. Just be aware many have odd timings, the most dangerous being very rapid.
The most important thing is:
Phase 1:
It is an animal
Oil & fire, or firecrackers will make this phase of the fight a piece of cake.
U can even run or jump through most of his attacks without taking any damage.

Phase 2:
He is simply a Headless.
He is bigger than the regular Headless but the rules r the same.
Mortal Blade, Divine Confetti & Loaded Spear (Thrust) will do the job.
NOTE: Mortal Blade will even stop his terror AoE.
I just killed them in my 3rd try.
Easy win:
Oil & fire @ Phase 1 ape as soon as he appears & he is @ 70%.
Let him burn or/and hit him with Mortal Blade if u wish & he is at 50%.
U can do this 2 times & the Phase 1 ape is almost dead.
Focus on Phase 2 ape only if needed bc Phase 1 ape does more moves.
U can use firecrackers if the chaos is hard.
This way u can separate them some secs.
