Looks like you have to start a new game. If you didn't manually save the game onto a flashdrive or something like that and it's no longer on your computer. You are SOL!

You should backup your save file should you decide to play again:

C:\Users\Your Name\AppData\Roaming\Sekiro\

Copy/paste the directory with the long ass numbers into another new directory (I named mine C:\Users\xxx\Documents\steamGamesSaves\sekiroSaves).

This is an issue all from software games have on PC, for some reason they never ever bother adding cloud support to their PC versions. it's there, they can easily do it, any game on steam has access to use it but they just don't request it from Valve.

My game crashed and uninstalled itself and my save was still there, so...

Did you know replaying a linear game is much faster than a blind playthrough? Shocking, I know, but that 30 hours probably really only stacks up to 7-10 hours when you actually know what you're doing.

It works form me:
Make a backup of you save
Start Sekiro
Make a new game
Exit and go to menu screen
replace the save data by the backup
and press continue
