Honestly, I'm trying the 'Git Gud' approach first.
Stab me once in the face with a thrust attack because I try to jump it, shame on you, twice, shame on me, after the 20th time I need to stop being a complete moron and Mikiro counter that ♥♥♥♥!
I personally think his first phase is the hardest he just attacks with his light attacks everytime but I think the umbrella is a good idea
Edit: Then the last phase (when he does his lightning nonsense). Reversal his backside until he goes down. Can play it safe if you just focus on trying to reversal, otherwise you can beat him up and reversal which is what I prefer.

Yeah, here are my tips.
In general, get good at deflecting. The sword phases are relatively easy to deflect attacks from since there are predictable attacks. Use the Mikuri counter as well on the predictable stabs, and jump over the sweeps.
Genishiro: For his mortal blade attack, get behind him and get in some free hits. I suggest circling behind him 180 degrees for his first swing, then another 90 degrees before his second swing, moving clockwise around him. Other than that he is the same as he was earlier in the game, and will die fairly fast as long as you are good with your deflects and counters. Watch out for his sweep, stay on top of him, and you'll do fine.
Isshin Phase 1: He has multiple attacks which are annoying here. Stay on the offensive, deflect his counter-attacks. He has an overhead long-ranged slash which I suggest avoiding by sprinting sideways then doing an additional side-dodge just as he swings to make sure you aren't hit. He has a charge with two fast slashes from a sheathed stance that you can deflect for large posture damage, though it requires some getting used to the timing and you can also run away (that drags out the fight though). He has a stab where he runs to your right first, that one is very predictable to Mikuri counter so watch for it. He has a sweep after a horizontal swing as well front a frontal attack which you may want to watch out for. If you are aggressive during this phase and properly deflect, you can beat him fairly quickly.
Isshin Phase 2: This phase is where the fight truly gets difficult. He starts using his spear, and gets a lot more difficult attacks. He gains a gun as well, which he can fire either single powerful shots from as part of a close-ranged combo, or multiple (5 shots or so) rapid-fire shots. To avoid the spear, you need to stay close to him and keep the pressure on. He has a horizontal swing which has a long range on it (a distance slash), but you can deflect it fairly easily and not take damage (jumping sometimes works, running away can work but if you fail to get out of range it does a lot of damage). He has running slashes and will combo his spear attacks with his sword and gun attacks, so you'll want to keep the pressure on and retreat (watching for his gun and spear charges) to heal when needed.
Isshin Phase 3: This phase is actually easier than Phase 2, except being that it's later into the fight, you'll likely have less healing items and such or be more likely to make mistakes. He has the same attacks as in Phase 2 for the most part, but gains some lightning attacks as well. These however are easily used against him by using lightning return - jump into the air as you are hit then hit the attack button to send the lightning back at him, and you'll do massive damage and stun him. If you return lightning 1-2 times, and hit him while he is stunned, you can get his vitality down significantly.
This fight took me a couple of hours to beat. I used the Shuriken mainly since it let me keep up the pressure with the follow-up dash. I also was playing with the bell active however, which meant his vitality was hard to lower - I had to focus on posture. It's a tough fight for sure, but just play it carefully. Deflecting is your most important skill here!
He's basically the final boss of the game for a reason. He's a culmination of everything you've learned throughout the game, and beating him feels like the great accomplishment it should be.
Though if you're not having fun, then there's no point in continuing of course. I had a lot of fun finally beating him though once I did.
I would suggest dodging through Genichiro's mortal blade attacks, while landing 1-2 hits in between.
Also for Isshin's double draw attack during 1st phase, you should look for a flash on the hilt of his sword. That's your queue to double deflect him.
