That's the main counter to him. He only has one attack combo, 10 hits in a 4-5-1 sequence, so once you get the timing down for it you should be able to deflect all of them or most.
Deflecting is immensely useful in this game, and I highly suggest you learn how to do so against enemies like him. He can be terrifying but once you get the hang of it he will die fast.
Also has a sweep you can take advantage of to hit him a few times or stomp on his head to do additional posture damage.
You are pretty likely to get enough parries to avoid being broken and taking damage while still hurting his posture.
I know it's the second and the record are trash but that's the tactics.
I only ever saw the giraffe guy.
True, if u manage to get pushed back too much the camera will kill u 9/10 but its just a parry tutorial this mid boss, so enjoy him as much as u can.
He will always jump back and do a charge attack if you do a perfect parry at his 5th attack which you can either use the spear to get two hits in or just jump when the unblockable attack hits. Eitherway you should get at least two free hit out of it.
its also possible to dodge his unblockable attack by using double jump so you dont have to worry about getting cornered.
