Whats the deal with Seven Spears at Ashina Rez?
Endless posture, destroys posture, lightyears across weapon hitbox, and designed just to Mikiri Counter, but hardly Thrusts?

Not fun at all, personally.

Optional, or any strategy?

I did everything before Genichiro on my first run and the game did not softlocked me.
Maybe beating the monkeys is fine if you don’t get the mortal blade afterwards, I never tried it, but the game breaks if you try to fight genichiro with the mortal blade in your possession.
How to Find Mortal Blade
Given by the Divine Child of Rejuvenation once the player reaches the Inner Sanctum of Senpou Temple, Mt. Kongo, after defeating the Folding Screen Monkeys.
What mean you can have it before Genichiro

Even when the Serpent did not show at the plunge point I could progress by getting the dried viscera instead of the fresh from the Serpent at the plunge and then I could progress as the whole Ashina Castle changed after that as I had already the Mortal Blade, had defeated the Ape and the Corrupted Monk

God . . . these "spoiler" message "/spoiler" are troublesome . . .
It may work something like at DS3, that you can beat Dancer before Vordt, then defeat the Greatarmor, but you can not progress untill you defeat that crap slug Aldrich and the giant.
It does not break the game just because you got an item early on if you can have access to it.

You can't enter the boss fight for the Monkeys before defeating Genichiro. That's just how the game works. If you haven't beaten Genichiro yet you can't enter the boss room, because instead of the bell you use to enter the boss fight, there's an NPC sitting there that you can talk to about the Divine Child

I really remember saving Genichiro for last on my first run . . . or I may be just confused by the order I did things on my first but I clearly remember the Senpou Temple hall there but I dont remember any NPC there.

Btw, I activated Owl at Hirata 2 on my second run (new NG) but if I do the Dragon do I still have access to fighting Owl at Hirata 2 as I already activated it?

You'll see the stuff about the NPC. I think he mentions the softlock glitch stuff there too, and it's just a good video in general that I recommend.

Since you already activated Owl Father at the Hirata Estate I believe you're good to go even up to beating the final boss. To collect the things to get the Owl Father fight, like eavesdropping and talking to Emma to get the bell you can't have started fighting the Dragon yet, but since you activated the fight I think you're good to go.
So to get Purification ending in NG+, I can do everything same as Dragon Homecoming ending except not give Kuro Divine Dragon and Frozen Tears?

Can I still go kill Great Serpent but not feed it's organs to Divine Child?

I believe you can still feed the child and still be able to manually pick the ending.
Not sure though.

You can do everything, go through the entire journey of getting all three endings, and you just choose which item you use on Kuro at the end when you defeat Sword Saint Isshin

After feeding Divine Child, she locked herself in her room until I defeated Owl where I fought Genichiro. So if I defeat Owl on top of Ashina Castle, can I still fight him at Hirate Estate if I do Purification ending?

I need to be 100% sure cause don't think I can do NG++ ;P

I'm assuming you mean the return ending? Since the Purification ending is where you fight Father Owl. You have to defeat normal Owl to get the bonus hirata stuff.

No no, Beat Owl on top of the castle, then do the stuff to get the Owl Father fight. You can do the stuff for the Return ending as well, and as long as you fight Owl Father before the Divine Dragon you're good. Then when you fight Isshin you get to choose between the Immortal Severance, Purification, and Return endings when you go to Kuro
Btw, the last Seven Spears becomes so easy when you use puppeteer at his bro, that it is almost ilegal, he cant even attack because if it is not me slicing his ass it will be his ex-bro that now will be slicing him, and he cant even attack any of us, neither me neither the other guy that is now helping me
Tbh, the fight become a joke, that helper should not be there or should not be allowed to 1shot with backstab deathblow to use puppeteer . . . it really break the fight completely (all that is needed is to use, once again, puppeteer and he survives to the end of second stage)
Yes, on my second run I tried to see if it was possible . . yes it is, and it breaks the fight completely. That is what I call a cheese there (my first run I killed the Seven Spears helper and had a 1x1 against the Seven Spears there, it was about more of the same from previous Seven Spears but a bit more dangerous. I did that also because I could not find a way to sneak behind none of them both so I ended up cheesing the helper on fire and then fighting the mini boss 1x1).

If you ever get stuck at Seven Spears later on the game, do it and get a free victory (just . . . pay attention to dont get hits on yourself, your "helper" still able to hit you too, a common thing that happen whenever you have a helper there).
Puppeteer Ninjutsu + Spiral Spear make the second Seven Spears fight a breeze:
