Is there a difficulty cap for NG+?
It took me awhile to beat Sekiro the first time because I was stuck on Genichiro. But then a few weeks ago I returned to the game and beat him after a few tries. After that it was like a flood. I started flying through the game. rarely was I stuck on something (only ever stopped for corrupted monk and true monk, had to take bell demon off for these fights) But then I searched up the endings and decided to do shura next.
It took me about a day to beat it, and then I decided to do the others. Next day I get to Isshin Sword Saint (ng+3 playthrough) and now I cant beat him. I dont do enough damage to him where as hes doing a bit too much to me for me to get through the fight. Can barely squeeze out phase 3 on him.

So I took a month long break and am thinking of returning to finish the old fartlicker off. But I am concerned about the ramping difficulty. Is there a cap to it or is every enemy just going to be getting more health/posture/damage every playthrough indefinitely?

From Software games usually stop getting harder at NG+7, not sure if it's the same for Sekiro.

it actually stops after beating ng+7 technicly BUT you can make game harder still (no kuros charm, demon bell)

#diffrence in enemies damage between normal ng and ng+7 with bell on and no kuros charm is 312,5 % (if you are curious i like math)

Does the bell stop adding a difficulty buff once you are on NG+7? I thought it just acted as if you where in the next NG+ cycle with a loot drop buff. Or is the difficulty just a flat increase regardless?

I also read on the wiki that apparently the demon bell buffs enemies less if you give away Kuro’s charm.

scaling is pretty janky and basicly individual for each ng

Demon bell still increases difficulty on NG+7.

As for it increasing difficulty less if you don't have Kuro's charm I've never heard that one. Some of the stuff on that wiki is pretty questionable, so I wouldn't trust everything you read on there. I suppose it wouldn't be too difficult to test that claim, though, as long as you don't test it stupidly.

AND NO i didnt took it from wiki genius (you would be know that if you will be actually reading wiki before talking about what is there questionable and what isnt lol )

And yes, some stuff on that wiki is quite questionable, or even just flat out wrong. Until a week or so ago the page about Kuro's charm had a claim that giving it up didn't increase enemy health.
