Are you sure you confronted the memories?
If you mean the ghost monk in mibu village. Dont try to fill her posture bar. It wont work. She recovers too quick even on half health if i remember correct.
Its a long hit and run fight. You can use 3 snap seeds in her and firekracker and fist of ashen to stun her.
The other fights that are comming are different.
I would be fine with being frail as glass OR having weak attacks but I don't see myself having fun if both are true, seems like making those prayer beads just made everyone deal more damage to me anyway...

Maybe you should go to some places else before that boss. You can get more memorys and prayer beads.
You are a bit early on her. If you only beat oniwa as main boss so far.
Also as said above, does your first question mean you haven't been using the memories? If you are going for a challenge run, that's fine, but it sounds like you aren't. For all those memories to do anything you do have to actually confront them, like prayer beads they are pointless just sitting in your inventory.
Edit from your new post, like me you bypassed the castle if you only have the one memory. That is the next place you were supposed to go after the bull, so head there next, then I'd recommend Senpou Temple, you can get another memory from there afterwards, and the boss is certainly easier than the monk.

And yes, you should be leveling up your attack as you play. Especially if this is your first run. It is possible that Corrupted Monk can be the second boss you fight, but you’re basically sequence breaking on a first playthrough in that case, as you aren’t even required to go to Mibu Village until about halfway into the game.
Corrupted Monk adn True Monk stages 1 and 2 she deliver a lot of wide sweeps that if you stay close to her body and dodge at the right direction and time, you can completely avoid the damage and slice her right after, just watch out for combos where it is not a good idea to dodge only once and attack right after, dodge through the whole combo and deal 1 or 2 hits, 3 or 4 maybe, right after the combo . . . you are already grabbing her super close anyway so no time to waste thinking, just pay attention to her moves to dodge again when needed.
(note: some attacks you cant just dodge so you may take some hits to the face anyway if you decide to go for dodge only and not pay attention for when you have to jump/deflect and when you have to get away).
Btw, you can use Mikiri too.
True Monk 3rd stage I dont advise you to stay close dodging, try deflecting or using something else like jump and prostetics, but when you get behind, it is 1 to 3 free hits.
If you see something that look human (or normal/natural) use Ako's Sugar.
If you see something that look supernatural use Divine Confetti.
I'm not saying I don't think I can beat the monk, its just it will take try after try after try, which will cause dragon rot and necessitate grinding for more items....it just seems like everything in the game is advising me to not take that approach when every mechanic punishes you for failure.
And I'm not insane at deflecting but I did a bit of it, and clashed at her a bunch, even a dozen or so unblocked hits barely made her health bar move at all, seemed to me like it was a strong indicator I was doing something wrong, if its one of those "o you just have to hit them 200+ times before they can hit you twice" ♥♥♥♥♥♥♥♥♥ I just not going to bother, that type of gameplay is just so boring.
Well after the mid boss you need to search the world to find 3 key items. Each is guarded by a boss. Usually the monk should be the last one in the natural game flow imo even tho you can do it in any order you want.
But you didnt beat that mid boss so far and likely miss many memorys and prayer beads.
You just went the wrong path by accident.
If you beat the bull, search the castle first and senpou temple.
That should be doable.
If you can dodge at close combat and stay near, you can also do.
Try to improve at everything else (deflect, jump, skills, prostetics) but, when you want to just move on, use your best, or what you feel more confortable with at the moment . . (or even what you think will work and that you can make it work) and go for it.

You should clear the bosses at the castle and in senpou temple.
Then face the boss atop the castle. Then you should advance.
At least that was always worked for me and felt like a natural flow.
