He did not hear Saint, he did not hear me or anyone else here and quit...
I found GamerGrade's boss fight videos better. Here's the one I watched a few times to defeat Genichiro.

His grabs can be interruped by normal attacks as Owl kicks and attacks can also be interruped by normal attacks (basically most enemies attacks can be interruped by normal attacks) If done right at the beginning, still, misstiming or misjudging a situation will end up in a bad result or some damage to the face. (Btw, going full rampage on Owl you keep the pressure but the old man is strong and resourseful and it did not work the same on Owl but makes the battle a bit faster, yes indeed).
1st and 2nd stages are harder than 3rd stage as at 3rd stage he does less normal attacks and tries more to use his specials and to get away from you.
So ... Even a full rampage on Genichiro, cornering him against every single wall if needed, would be a good Idea, still ... He deleted his save and dont feel like coming back.
Still working on the Owl...
Edit: I would have thought since spending so many hours in the same arena fighting Genichiro, I should own the arena ;P
I was saving Genichiro for last because I had in mind he would be the final boss but when I was told Emma would heal the dragonrots after I defeat him I just went full rampage on him.
For my way of playing the final stage was more like a joke as he take more of the bash and even reacts less ... He is more damgerous but I was slice-dancing around him and even his specials did not work and I even got a lightning reversal once.
Once it clicks though, and it will, you'll be powering through in no time. I'd recommend watching Tyrannicon's 'How to Beat...' series. His videos were really helpful; for me.

Also what means elderly?
As long you not 50-60 it should be no problem. Genichiro only got very few fast moves rest is pretty predictable.
As long you can still drive a car save you have the reflexes for sekiro.
I just wanted to make that one clear.
Genichiro really only got one fast thrust that he sometimes use out of nowhere. The rest is super predictable.
Also heal is very safe in this fight because if you have some distance he will always make his changed bow shot which is easy to evade.
Also in phase two make sure you see what he does after his jump. Unlike in phase one he will do thrust or sweep.
Only react when you see what he does not to early because you think he makes s thrust.
On stage 3 he dont even deflect that much making the fight faster.
Genichiro is still quite early in the game.
He can start a new game, he will see the early areas will be much easier for him.
Maybe OP should just let some time pass to settle the salt level and come back another day.
I quit DS3 for some month and came back later having a great time.
If you struggle again the Tyrannycon vids on YT are pretty good.
You find cheese for bosses you can cheese, and easy methods for bosses you cant really cheese.
Sekiro use cloud storage by default, so if you havent turned that of, you should be able to get your last save back.
