What's Emma's Last Name?
Would it be Ashina? I mean, I know her backstory and I know it's probably not known technically.... but wouldn't it still be considered Ashina?

Emma's last name almost certainly wouldn't be Ashina. You get the last name "Ashina" if you're part of the Ashina clan, which Emma is not. She just works for them.

We don't know too much about Emma's origin. I think it's likely that she's a foreigner for one thing, considering her name and the lighter tone of her hair. We know she was found on a battlefield by the Sculptor back during his Shinobi days, and she was adopted by the legendary doctor guy Dogen. If she had any last name she would share Dogen's, but I don't think we ever learn that either

One interesting thing is in one of the remnants of Kuro and Emma, when Kuro asked Emma if there are any Hirata survivors left, Emma responded "There are not many of us left." Does this implies Emma is once a Hirata?

Probably not, the events of the Hirata estate took place just 3 years ago, well after she had been rescued from the battlefield and adopted by Dogen. When she says "Not many of us left", she's likely referring to the retainers of the Hirata, rather than the Hirata family themselves
