If she's recovering her posture too much you can take some of the tips people already mentioned or you can chip her vitality. A good window is when she does her perilous sweeps. Instead of jumping and kicking off her head, do a neutral jump (no directional input as you jump) and use air control towards her to land behind her. Hitting her from the back should let you land 2 or more attacks before she blocks/deflects.
Eventually she won't be able to recover her posture nearly as quickly and you should be able to build it up and down her.

It's really easy if you know how to exploit the flaws in the bosses AI's.
This fight is all about deflecting attacks very quickly.
O'Rin of the water was a GREAT fight for me. That's where this game realy "clicked" for me.
Rinse and repeat.
