Just pressure him.
This is especially true with Genichiro-sama, you need to keep the pressure up!
Don't back away, always stay close, deflect all his blows and keep attacking him relentlessly.
In my experience he did the most damage if I got away from him to heal, because then he draws his bow and it hits you hard.
If you are especially unlucky, the arrow will break your posture and he will swiftly attack you with his sword, dealing a big amount of damage.
Also, don't be intimidated by his last phase, it is in my opinion the easist part of the fight. You just keep attacking him, especially when he tries to run around you and deflect his lightning. This will get his posture up in no time.
If you don't give up and learn from your mistakes, you will defeat him eventually, he is a strong opponent, so give your best.

Might be just me thou, because I cant possibly learn his moveset if I die to Genichiro 8 times out of ten.

Having to fight him EVERY TIME before final boss is severe overkill imo.
Also, what's his (and final boss's) thing with circling you so hard, camera tracking cant catch up? Am I playing as ninja, or a skeleton from DS1, getting cirle-backstabbed?
EDIT: Main battle agains Genichiro was challenging, but really fun. Can't say that about the next encounter.
That circling bit is utter bs. Saint doesnt even come close to Sekiro running speed.If anything, you should be backstabbing him.

Genichiro is one of the easier ones. Couple of deaths is all it takes. His attacks are well telegraphed and predictable. Its the bow that causes most issues, but even that is easily deflected.
The key is staying on the offensive. Just keep spaming him until he does a deflect, deflect whatever his retaliation is, back on the offensive.
On a side note, somewhat sad to hear that there may not be any DLC for this game as I absolutely loved FromSoftware's take on Medieval Japan and the combat system; Not overly enthused by Elden Ring or such but mostly because I've come to truly dislike GRRM, so will wait on the actual gameplay footage).
