Report a translation problem
The only thing left to do in the game is to find their eggs. Are they rare spawns like the light/dark shifted monsters? Or do I need to use a monster bell to respawn them?
Ah, I see your real question now. To challenge already-defeated bosses you do so in the Keeper’s Stronghold. Enter the fuchia-colored area of it and you will find multiple NPCs. One of them does “re-challenge Champions”, one is “Infinite Arena”, and another does Keeper Battles. I think this is what you’re looking for.
That said you redo any boss you have beaten and try to five star them, if you do so, you will get an egg for that boss (only once). Just go to the keepers santuary area and re-fight the challenge monsters to do that.
As far as boss monsters shift variants, the only one you can find in the wild is the Minitaur and the Monk.
Otherwise you NEED a shift stone to convert a boss monster (in current version of the game).
Well ♥♥♥♥. They're all lvl 24 now. Unless I build a team solely to exploit their weakness, getting their eggs gonna be a pain.
Ha, I wouldn't be too concerned. With higher level monsters you have more tools available to work with in terms of making good builds. In some ways, challenging them later on like this will be easier.

Easier yes, but exceedingly more time consuming. Qirin for example will force me to grind 3 other completely different monsters to 25 to abuse his status weakness. (Fungi is the first to comes to mind, which starts around lvl 10)
There are those level-up badges which can help with this process. They are normal drops and also quite farm-able from the infinite arena.
As for my own experience, I was able to 5 * all 9 of the currently-available champions without needing "a ton of different monsters", so you might not need to work up "so many". A few, perhaps, but not a ton.
