You can flee with your knights it depens also at what age are you in start castle pikemen are not that efficient agaisnt knight if you have more of them.

Spears are good against cavalry and lose to pretty much everything else. The best choice depends on the civ match up though.

Gurjaras have the weakest spearmen, but they have Heavy Camel Riders with extra melee armor to cut through cavalry.

Crossbows, or Long Swordsman if you've somehow screwed up so bad you're out of wood. Franks, Throwing Axeman.

late game knights(paladins) need no protection. Spears are slower run away and target enemy eco. If enemy is a goth player who spams spears and if you fight head on you will loose. Depends on what part of game you use them. Also depends on what civ you have what enemy civ you face.
