#irony off: You need to specify if you want eco for a 10 min rush, a 20 min rush or a 60 minute boom - bonus and bonus is not the same.
While technically not an eco civ, I personally like Lithuania for the starting food. I've managed a 7:56 click with no hunt. Perfect for my playstyle.
If you want general booming, without theorycrafting too much, I would guess Vikings, Cumans, and Khmers.

I would personally put Chinese more between 5 and 10 (also behind poles, malays, bengalis), and Persians between 10th and 20th.
It's surprisingly hard to play with easy civs.

Chinese - +2Vills and alot cheaper techs
Hindustani - Cheaper vills, just insane for the whole game and deserve a nerf
Hindustanis - Food saving on Villagers
Poles - Farm bonus and Stone/Gold bonus
For nomad games I would much rather have spanish or malians than persians personally
