for example if you go archers you need more on wood and gold, if you go cavalry you need a better food economy.
maybe this site is helping you a bit to understand how many villagers you need on each ressource:

Losing games with 5000 wood, 5000 food, 2500 gold in bank shows me I completely messed up.
Edit: Okay, that's way too much stone. Like 10 stone, 30 gold.
I find 120 or 60% of max pop is my golden number, allows you to have a mainforce of 60 with 20 as backup/raiding.
The ratio realy depends on the army composition
Yeah, I played a quick game with persia. 2 castles and 2 stables training knights and war elephants is too much for 30 food, 30 gold. probably gonna have to raise my vils.
As rule of thumb you need 6farms/6 gold miners per knight and 18 farms/8gold miners per elephant.
You needed 48 farmers/28 gold miners for that production level, plus wood cutters/stone miners.
The 60% rule never fails me on endgame
PS: You need trade for this and to reach this stage of the game, also any decent player would zerg you with halbs

Thanks for the tip. Fortunately, I only play vs. AI and co-op.
Generic: 35-40 Wood, 35-40 Food, 40-50 Trade Carts. Zero on stone because you'll have mined it all.
Persians (Food Heavy): 20-25 Wood, 60-65 Food, 50-60 carts.
Celts (Wood Heavy): 60-65 Wood, 25-30 Food, 50-55 carts.
There's your ball park :)

EDIT: ^The above suggestion assumes constant fighting and need to replenish casualties like in a multiplayer situation.
