Main difference is that the factions in AOE3 are much more unique compared to AOE2, the game is way more fast paced, there's less economy (no gather points), smaller maps and the quite controversial card system which allows you after a certain amount of experience is gained (through building and destroying stuff) to send Home city shipments which give you a certain advantage in form of ressources, units or upgrades in gather rates, the campaigns are based on a fictional family in AOE3 rather than real people like in AOE2 etc.
I personally prefer AOE2 because I absolutely despise the building limits and the fact that there's a lot of pop balance going on in AOE3 (better units cost more population space and with a total limit of 200 pop your endgame army is just very few units).
AOE3 had some good ideas like more unique civs but also a lot of stuff to despise.
I would check out various gameplay videos to see which style you like more.

I prefer AoE2, and it's very stable for me. Don't really know why others are having issues with crashes and what not, I haven't experienced those since launch.
AoE3 is just a different beast in general, and I hear the DE for that one is unstable but, given how this community talks about stability, I'd take that with a grain of salt...
It's not as fun and interesting as AoE 2 or even AoE 1 is.
You have nonsense building limitations in AoE 3, no stone resource, no wonder victory.
You cannot even have fun with taunts there like in AoE 2, because taunts don't even exist in this game... AoE series could end on AoE 2 to be honest.
