How to put villagers back to farms?
So basically I often end up in a situation when I need to take the villagers of farms to quickly build something, for example.
Is there any way to return them to their previous occupation without manually assigning a farm for each villager?

Shift, + click back on the farm when you are finished with their build queue's

Yeah, shift-clicking can queue up tasks. Just make sure to NOT shift-click for the first task, or the villager will finish what they're doing before doing the new tasks. (In this case, the farm would have to run out of food before the rest of the queue began.)

Edit: For farms and fish traps, you have to queue each villager individually, or they all fight over the farm. Other resources will let the AI sort out which villagers move to nearby trees/mines due to congestion.

Still not very convenient if there's a lot of farms but beggars are not choosers.

If another farmer gets his farm exhausted instead of resowing he will go to abandoned one so either do not use a farmer for building or be prepared to check whether builder´s farm is not taken by aother farmer meanwihile.

That's why I usually keep 5 or 6 villagers on the ready, just to build.

We must be playing different games then, cuz in my game I simply right click one farm with all villagers and they spread across all available farms in the area.

If you have 10 villagers and 10 farms, you right click one farm, and each villager will end up having its own farm.
If you have 10 villagers and 8 farms, 8 villagers will get a farm and 2 will idle after all farms are taken.

Maybe you are building your farms too far apart from each other.

I don't believe you're answering OP's specific question... because I have the same question.

Say you're creating brand new villagers from the town center, how do you automatically assign the newly created villager to farm the next open.

Pretend that you have 5 villagers queued up in the town center. How do I get the newly created villager to seed the next open farm without me having to constantly change the villager' waypoint?

You don't have to change the waypoint, leave it on the first farm and they will walk to the center of that farm, stop for 1/2 a second if it is occupied and then walk to another nearby empty farm if there are any empty farms / unseeded farms nearby
