control shift select building type
is there a way to select all buildings of a type as there is with castles?

Yes, there is with most buildings, look in the options and hotkeys menu to see, and also maybe change them.
As i recall it is ctrl + shift +B for barracks as standard.
L for stables
A for archery ranges
K for siege workshops
shift + H for town centers.

For the rest i would just look in the options
