Slight correction needed over there chief: Age 1 DE was written initially for UWP only but was released as a Win32 API for steam and the same goes for Age 2 DE (as far a know it steam isn't playing nice with UWP making any steam release by defaul a win32 API affair... read this one in a dev interview a while ago feel free to track it down if u like)
Regardless, if you diehard 7 fans are that annoyed by the OS requirement, nothing is stopping you from still enjoying AOE2 HD instead.
They probably just decided that they're sick of building games and patches for 20 different versions of Windows and in future want them to be on Windows 10 only to save time and effort.
Tell me one "patch" or "fix" Microsoft released for games, not their games, but fixes which benefited everyone? The reason you listed is false, they just want to lock down users and get as much market share for windows 10 as possible. If UWP takes off, most games will be on the windows store and Microsoft can just shadow ban Steam from that point. A scenario I'm sure Microsoft dreams of so badly.
Somehow I don't see Microsoft ever being stupid enough to shadowban (or ban in any way) STEAM from Windows. It'd be suicide for them.
They could just easily make the Steam client perform poorer on WIndows than their offering, provided the devs would switch as well, Microsoft would do that in a heart beat. As it stands though, luckily nobody cares about the Microsoft store.
It's all about Microsoft's strategy, embrace, expand, extinguish, I suggest you read up on it, quite interesting topic :)
Just decline all the "spyware" options when you install it then and it won't collect your data...
...but everything else in your life will still collect it, so there won't be any noticeable difference.
Those options are not worth anything, disabling them still collects data, after a reboot or after a new "update" most of them are set back.
In that case, what I want you to do when you get home is email me the passwords to all of your email accounts, not just the nice, respectable work one in your name, but all of them, because I want to be able to just troll through what it is you're doing online, read what I want to read and publish whatever I find interesting. After all, if you're not a bad person, if you're doing nothing wrong, you should have nothing to hide.
Your government, ISP and a thousand other multinational corporations are already doing this. Got a smartphone? It's broadcasting your location at all times and is most likely collecting your speech and text patterns for "advertising purposes" too.
Use Google? Everything you ever searched for has been recorded and can be traced back to you if it needs to be.
Got one of those Amazon Alexa thingies? Forget about it, your every word is being recorded. Your TV might also be doing that.
Ever use a credit or debit card to pay for things? Your government and a thousand other corporations know where you're likely to be at all times of the day, what you've bought, what you're likely to buy in the future.
Got a car? Got it insured? Thousands of companies and agencies know your name, age, DOB, address and more. You think those companies don't share your info? You're right, they don't share it - they sell it.
Do you use, or have you ever used, Facebook, Twitter, Instagram, Myspace or any other social media? Your information has been shared all over the world a million times.
And you're worried about Microsoft having it? Grow up. They already have all the information about you that they need, and they didn't need you to download Windows 10 to get it.
I don't have/use smartphones, Google, Amazon, Facebook, and Twitter for the same reasons you described above.
Just because your government and ISPs do it, it doesn't means greedy corporations like the ones you listed should be able to do it, and if you don't care then at that point it's a case of: "Arguing that you don't care about the right to privacy because you have nothing to hide is no different than saying you don't care about free speech because you have nothing to say".
